Wild Mushroom Risotto with Parmesan Crisps

Serves 4

Ingredients

  • 300g arborio rice

  • 1 litre vegetable or chicken stock (kept warm)

  • 250g mixed wild mushrooms (chanterelles, porcini, chestnut)

  • 2 shallots, finely diced

  • 2 cloves garlic, minced

  • 50g unsalted butter

  • 2 tbsp olive oil

  • 125ml dry white wine

  • 60g freshly grated Parmesan

  • 2 tbsp double cream (optional, for richness)

  • Fresh thyme leaves

  • Sea salt and cracked black pepper

Parmesan Crisps

  • 100g finely grated Parmesan

Method

  • 500g cooking apples, peeled and sliced

  • 200g blackberries

  • 100g caster sugar

  • 1 tsp ground cinnamon

  • 1 tsp lemon juice

Crumble Topping

  • 200g plain flour

  • 100g cold unsalted butter, cubed

  • 100g demerara sugar

  • 50g rolled oats

Vanilla Bean Cream

  • 300ml double cream

  • 1 vanilla pod (or 1 tsp vanilla bean paste)

  • 1 tbsp icing sugar

Method

  1. Preheat oven to 190°C. Place apples, blackberries, sugar, cinnamon, and lemon juice in a buttered dish.

  2. Rub butter into flour until coarse crumbs form, stir in sugar and oats.

  3. Scatter topping over fruit. Bake 35–40 minutes until golden.

  4. Whisk cream, vanilla, and icing sugar until soft peaks form.

  5. Serve crumble warm with vanilla bean cream.


Classic Chocolate Cake with Silky Ganache

Serves 10–12

Cake Ingredients

  • 200g plain flour

  • 200g caster sugar

  • 100g cocoa powder

  • 1 tsp baking powder

  • 1 tsp bicarbonate of soda

  • 2 eggs

  • 200ml milk

  • 100ml vegetable oil

  • 200ml boiling water

Ganache Frosting

  • 200g dark chocolate, finely chopped

  • 200ml double cream

  • 50g unsalted butter

Method

  1. Heat oven to 180°C. Grease and line two round cake tins.

  2. Sift dry ingredients into a bowl. In another, whisk eggs, milk, and oil. Combine, then stir in boiling water until silky.

  3. Divide between tins, bake 30–35 minutes. Cool completely.

  4. Heat cream until simmering, pour over chocolate and butter, stir until glossy.

  5. Spread ganache between cake layers and over top for a smooth finish.
